Welcome to Southeastern...

We are so excited about what is going on in our lives right now. Bob is an official graduate student at Southeastern Baptist Theological Seminary. He spent today and will be spending most of tomorrow in orientation. He will begin classes on Thursday. Bob is pursing a Master's of Divinity with a the focus of his electives being in church history and languages. We have prayed very fervently over this new chapter of our lives as we seek God's will and to be obedient servants honoring Him in all we do. Bob is ready to get back to school after his year off. This will be challenge for us and we beseech your prayers. Bob will be going to school and working full time. So this will definitely bring new changes to our newlywed life. Especially while we try to juggle time devoted to each other, time devoted to the Lord, and of course studying, writing papers with his 40 hour work week. We know the Lord is sufficient to provide for not only our physical needs but spiritual and mental as well. We also ask that you pray for me I am taking my North Carolina Nursing Boards seeking my R.N. license next Tuesday the 25th. The Lord has been so faithful and we are very encouraged as we begin this new chapter in our lives.

Sweet Friends and Cheesecake Masterpiece

Today has been great!! Bob and I invited our sweet friends Josh, Jessica, Ashleigh, and Gene over for lunch today. So we decided what would be better than a cookout with hamburgers, hot dogs, fixin's, fries, and baked beans. Lunch was great. I only wish I had taken some pictures for the blog. They are the sweetest group of friends. I am so sad that they live across the triangle because that prevents us from seeing each other on a regular basis. Anyways since we were having our sweet friends over I had an itch to bake, in other words, the Kitchen Aid was calling. I really wanted to make these cute little cupcake/brownie burgers from Bakerella's Blog but since this was the night before my husband suggested I try it out before we have company in order to avoid another mishap (ex:cookie crumbles) So I debated and debated I could try cookies again but I really wanted wanted to try to make a cheesecake. So I unfortunately didn't have the Southern Living recipe so who do I turn to but of course Bakerella. I guess I am a bit addicted to her blog. So at about 1:15am, yes it was late, that I began pull out the stuff we would need and then the mix ingredients together.


I followed the recipe under my hubby's supervision, not that he knew anything about cheesecakes either, but he was sweet enough to read the recipe to me off the computer.

So we finished mixing and then baked it for 1 hour and 25 minutes. During which my husband stayed up with me and even did some laundry. He is simply wonderful!

The timer finally went off. The cheesecake came out beautifully, only a few minor cracks. Unfortunately I did not hear about baking it in a water bath to prevent cracks until after my beautiful cheesecake was cooking, oh well.

So after telling my husband no he can't try it tonight it need to go in the fridge we chilled it overnight and waited for the taste verdict. So after a yummy lunch with our sweet friends we cut the cheesecake! Guess what!! IT WAS DELICIOUS!!! Yes, success and my love for baking grows! I can not wait to try something else!

Kitchen Gadgets and Mishaps....

Hello All! So in trying to be the good housewife I have been experimenting in the kitchen a bit. I have discovered that baking from scratch is a lot harder than it looks. Also, it is a good thing I did not have high aspirations to be a gourmet baker over nursing! I really love to cook and love spending time in the kitchen. I love trying new recipes and ideas. I love to cook but I have never really baked. I can make a good pound cake and some pre-packaged cookies but really never really made anything from scratch. so I decided to try my hand at it. A major plus when you get married are the fabulous kitchen gadgets people get you off your registry and lovely gift cards to buy what you want that you didn't get. Well, it has been my dream to own a Kitchen Aid Artisan stand mixer. I mean it was the first thing I registered for at every store. Now granted it is over $300 so naturally I did not get one as a gift. However, those Belk gift cards began to add up especially after some returns of the duplicates we had received! Lo and behold I had money for my mixer. So I waited it went on sale for $299, then at the end of July Belk had a bridal completion sale, which was an additional 20% off, and on top of that Kitchen Aid has a $40 mail in rebate. So I capitalized on the great deal and purchased my new Kitchen Aid stand mixer. Deciding on a color was difficult but in the end we went with black because you never know when you will want to change you kitchen color scheme at some point.

I was overyjoyed with our purchase, now what do I make. I decided now was time to try my hand a baking from scratch. So I went to Bakerrella's blog (because she is AMAZING) and it just so happened she had a recipe for chocolate cookies in a recent post. So I bought the ingredients during our Wal-Mart run and began to make the dough. It seemed easy enough and tasted good too!

So I spray the cookies sheets and proceed to bake 2 dozen cookies.

Well, umm they came out interesting.
#1 They all squished together so it looked like I made a cookie cake
#2 They were VERY thin
#3 The fell apart into crumbles even when cool
#4 My husbands critique was "They taste like fried dough" but of course he ate the majority of the cookie crumbles
So alas my made from scratch cookie efforts were a bust, but I did love making them so I will try again. In addition to the newly acquired kitchen aid mixer we made a few other gift card purchases. This included a Cuisinart Convection Bread Maker. It is the size of our microwave and came with 80 different recipes for bread and it makes jam.
I have not given this a try but intend to try but intend to soon with my hubby so I will blog about when it is done and I hope it will be a better experience than the cookie crumbles. so keep your fingers crossed :)

A little update on me: My blood results were the same as last week a little low so i go back at the end of this week to recheck it. Other than that I am enjoying not being on bed rest and finally getting to know the area we live in. I can even get around a little without Maggie (our GPS). Through all of this God has been so faithful!! He deserves all honor and glory!!!

Weekend Fun...

Crazy how time flies! Today marks the 50th day Bob and I have been married! I love being married. It is fun and I can not complain for he is the most amazing man! I am still improving and enjoying not being stuck in bed or a chair 24/7. I must say I have enjoyed my weekend and I am excited about this week, especially since one of my best friends is visiting with us. Erica came up from Albany! It was so fun to pick her up from the airport Saturday. Yesterday, we made the best pizza ever!
Buffalo Chicken pizza, can you say yum! It tasted WONDERFUL!! Right now I am trying to introduce Erica to Harry Potter. I currently have movies 1-5 on DVD, tonight we are watching movies 1 and 2. Hopefully, before she leaves we will see number 6 in theaters! Well, I hope you have had a great weekend too! God has been so good. Be encourage no matter just what trust in Him.

Unprepared...

"You are now pronounced husband and wife".... these words are something I had anticipated hearing for many years and now it was here. We are married, a new family established. The Lord defiantly has His hand in this relationship and marriage from the very start. Bob and I have been together for almost 7 years and nothing could have prepared us for the way our marriage began. We had an amazing wedding. It flew by faster than I thought possible, especially when I think of the 16 months of planning that was put into it. We then left and went to Montego Bay, Jamaica on amazing honeymoon. What an amazing start to a great marriage. However, nothing could have prepared me for what happened on the 9th day of our marriage. Bob and I after getting back from Jamaica were able to be a part of our dear friends’ wedding in Orlando and then spend two more days with our family before the big move to North Carolina. On Monday we began the long haul to NC, which takes approximately 10 hours. While driving I realized that once we got outside of Atlanta my right leg was cramping. I called Bob who was in his car and said let’s stop at Starbucks before we get to South Carolina. We stopped and when I got out of the car I realized my right leg and foot were swollen, which was weird that had never happened before. We debated what it could be and then I just thought maybe it is from driving and traveling so much all I have been doing is sitting. As we continued to drive it got worse and worse and more painful. By the time we got to Greenville, SC about halfway our parents were worried and wanted us to go to an urgent care or ER. I defiantly did not want to go to the hospital thinking this will get better when we get home and I will prop it up over night then it will go away. We keep driving anf get almost to Charlotte, NC and stop at a rest area, which we had been doing every hour since we left Greenville, SC, and I could barely get out of the car let alone walk. I was really scared and thinking this may blood clot just like my sister-in-law (an EMT) and my mother-in-law were saying. This freaked me out, I just finished nursing school and it wasn’t like the last 100 miles this thought had not crossed my mind along with worst case scenarios. So there we are at a rest stop about 2 ½ hours from our new home. I was very upset all I could think is what are we going to do I don’t have insurance we can’t go to the ER we will never be able to pay that back and we just got married. So after negotiating with Bob and our very worried parents, which was not smart, I said we are in two cars so let’s just get to our apartment and then we will go to Wake Med in Cary. So 12 ½ hours after leaving Albany, and in a lot of pain along with a right leg that is twice the size of the other and a flip flop that no longer fits my foot we pull in at our apartment and park then I get in Bob’s car to go to the ER. Now I am terrified I can barely walk and the pain is unbearable. We go into the ER register then sit down and in 3 minutes they call me back. We get to triage I answer a few questions and then next thing I know we are in a room with an ER doctor. I knew from experience that service this quick means it is really bad. So after being seen by 3 ER doctors they diagnosed me with a blood clot but said they could not confirm it until the morning. Then they told us you should not be here this is very serious and you may even experience a fatal complication tonight. So I was crying Bob was crying all I could think we have only been married 9 days and I am only 22 years old this can’t be happening to us we just got off our honeymoon! And of course when Bob call our parents we ddin’t mention the fatal part this was bad enough news. So they kept me overnight in the ER version of an ICU. I swear Bob didn’t sleep every time I woke up (thanks to the morphine I got a little rest) he was awake in the recliner watching me, so needless to say we were both scared and worried. They did the scan in the morning and found the clot went from my groin to my ankle. They placed me on Coumadin and Lovenox shot immediately. We had a few visitors, which was great and encouraging especially since we hardly know anyone here and our family and friends are so far away. My parents came in that next night late and Bob finally went home and got some sleep. I was in the hospital two days. I must say going home was weird for one thing it was mine and Bob’s apartment we went home to and coming home form your honeymoon and spending the first night in your apartment with your parents there was not what I had expected at all! However, I was so grateful for them being there. They helped out so much and we couldn’t have done without them. Also, having a dear and sweet family, who as known Bob since practically birth, live right up here just a mere 7 minutes away from our house is so comforting. They have blessed in so many ways. When my parents left Bob’s mom stayed with us for a week, which was also a blessing and huge help not to mention I truly enjoyed spending time with her. God has truly provided. Bob had to return to work the day after I was put in the hospital and He totally provided people to care for me and help with the house and food. It was so hard because I just didn’t know how this would all work out but of course He has shown Himself faithful thought this entire process. I am finally off of the Lovenox shots and they say my Coumadin is at an appropriate level so now we just wait, wait for the blood thinners to do their job and my body to absorb the clot. The most difficult thing throughout this has been the pain. The pain medicine take the edge off but pain medicine it made to work of nerves and this it a blood flow issue. Sometime I can’t sleep which is the worst. Also the loneliness, yes people call to check on me and drop by but most of the time I am by myself, unable to really leave my apartment and it is difficult but honestly in this I have found great comfort in the time I am spending with God and His word. I as well truly miss fellowship with our church, especially now, but I know that the Lord will provide a church here for us to grow, fellowship and serve in when I am well. I must say that through this I have seen now more than ever that God has blessed me with an amazing husband. I could not ask for more he goes above and beyond. He has done so much and even learned to cook! I have the good days and the bad days but the Lord has seen me through them. Bob and I are learning a lot about faith and dependence on God especially as the bills have started to arrive. God will provide, we know this and we trust Him for it but it doesn’t mean it isn’t a struggle daily even hourly. I will continue praise him through this trial we are going through for we are not alone and He is able!

In the beginning....

After conquering the world of myspace and then facebook I have decided to blog or atleast try. Why not? What better way to document this roller coaster ride called the first year of marriage and of course keep our family and friends updated on our lives. I will definitely have plenty to write it seems as the first 25 days of our marriage have been proven to be very interesting and a definite learning experience. So I hope you join me as I share our joys, hopes, fears, and tears through this wonderful journey of sharing our lives together unfolds.
